What You’ll Need

1 tablespoon coconut oil
1/2 small onion, sliced very thin
6 pitted black olives, diced
2lbs fresh baby spinach, washed & stemmed
1/2 teaspoon fresh lemon juice
sea salt
pepper

The How To

Heat a large pan with a lid over medium high heat
Add oil and sliced onions, then saute until onion starts to wilt
Add spinach and black olives
Saute 2 minutes
Add lemon juice, salt and pepper
Cook one more minute to enhance flavor
Serve
